Organic Permata Gayo
Meet Permata Gayo, part of our special Best of Ibis series highlighting the depth, diversity, and beauty of Indonesian coffees.
This Organic and Fairtrade coffee comes from Aceh, Sumatra, Indonesia, and is named for the Permata Gayo cooperative. Roasted to a true medium, it brings the depth and versatility we love from Sumatran offerings while remaining balanced and approachable.
The cup opens with a syrupy sweetness reminiscent of prune, which softens into a nutty, honey-like nougat note. From there, a savory garden sweetness comes through, think roasted zucchini with a subtle touch of char, adding earthy depth and complexity without overwhelming the cup. A crisp cedar note lingers in the finish, bringing everything together with a clean, woody structure.
Like many of our Sumatra coffees, Permata Gayo continues to open up as it cools, becoming sweeter and more cohesive over time. Consistent, versatile, and deeply satisfying, this is a great choice for a wide range of coffee drinkers.
