This collection features coffees that are often several months post-roast but still tasting great. These bags come from occasional overstock, such as small roast plan miscalculations or orders that changed after roasting and ended up sitting longer than intended.

Because we are a roast-to-order roastery, these coffees are offered here as a separate listing at 30% off.

Each bag is nitrogen flushed and immediately sealed to slow oxidation and preserve freshness. In fact, many coffees benefit from a period of rest after roasting, allowing flavors to fully develop and settle into balance.
