The final release in our recent Best of Ibis exploration of Indonesian coffee is something truly different.

CSC Jasmine Co-Ferment comes from Bener Meriah in Aceh, Sumatra, and serves as a fitting culmination to a series that has highlighted just how diverse, complex, and surprising Indonesian coffee can be.

Unlike the more traditional wet-hulled coffees associated with Sumatra, this small micro-lot receives two additional processing steps. After picking, the coffee cherry is held in nylon bags for up to 16 hours to begin softening and developing additional sugars. The fruit is then removed, and the coffee seeds are placed into a sealed fermentation tank with dried jasmine flower powder and yeast before being patio-dried, wet-hulled, and dried the rest of the way.

The result is an exceptionally floral and expressive cup that really comes alive as it cools. Fresh, lightly sweet Sencha Green Tea appears first, followed by delicate and aromatic Jasmine Blossoms. A bright, mouthwatering Citrus Medley lingers in the finish, creating a clean and refreshing cup unlike anything else in our current lineup.

Roasted medium-light, CSC Jasmine Co-Ferment is especially beautiful as a pour-over or flash brew, where its floral and citrus qualities have plenty of room to shine.
